Cheeses. View of an assortment of cheeses. Cheese is a dairy product made by using bacterial action to separate the solid part of milk from the liquid part. Usually cows' or goats' milk is used. Cheese, like other dairy products, is rich in vitamins and calcium and phosphorous, minerals essential for a healthy life. They are also high in cholesterol and fat, however, which can lead to increased risk of a heart attack or stroke. The cheeses seen here include Emmentaler (far right, with holes), Roquefort (upper right, white with dark mould), Stilton, (centre left, yellow with blue mould) and Camembert (white, behind Stilton).
