New Mexican Century Plant, Agave parryi var. neomexicana. Native Americans brew the alcoholic drink mescal from this plant and roast the heart in a fire pit as a starchy food source. This rather small variety of the species inhabits Chihuahuan Desert regions of West TX and New Mexico. Although the main plant dies after flowering basal offsets called pups usually develop in its place. it is a fallacy that they take 100 years to bloom.
