A large stone wheel for crushing the agave hearts after roasting them at an artisanal mezcal distillery in the valley of Oaxaca, Mexico. The wheel is normally pulled by a horse or donkey. These small family businesses make mezcal in the old traditional ways without mechanization or machinery. A mezcal distillery is also known as a palenque or fabrica or trapiche.
