Salmonberries. Fruit of the salmonberry plant (Rubus spectabilis). Salmonberries are a rich source of vitamin C and can be made into jams and wines. Found throughout North America from Alaska to California, the plant produces dark pink flowers and salmon-coloured berries. However it is thought that the name arose because the early spring sprouts of the plant were eaten raw with salmon meat or dried salmon spawn, rather than from the colour of the berries.
