Selection of vegetarian cheeses. Selection of hard and soft, full fat and half fat cheeses. Vegetarian hard cheeses are manufactured with rennet derived from a non-animal source. Vegetable rennet may be derived from a plant, fungal or bacterial source. In some cases the source may be a genetically-modified organism. Soft cheeses are manufactured without the use of rennet.
