Sugar cane plantation harvest. 19th century artwork of workers harvesting sugar cane in the Antilles in the Caribbean. A steam train and chimney smokestacks show the industrialisation of agriculture that was taking place at this date. Sugar canes are harvested from the fields, and then shredded and crushed to extract the sweet, sugary juices. Further refining is then carried out to produce sugar. The fibrous solid part of the canes can be burnt to power the other processes. Artwork taken from Grands Hommes et Grands Faits de l'Industrie (Great Men and Great Facts of Industry), France, circa 1880.
