Teff grain, color-enhanced SEM. Teff (Eragrostis tef) is an important food grain in Ethiopia and Eritrea, where it is used to make injera or keyta, and less so in India and Australia. It is now raised in the U.S.A. (Idaho). The plant is adapted to environments ranging from drought to waterlogged soil. Teff is high in dietary fiber and iron and provides protein and calcium. Outside of its traditional areas it is consumed by people on gluten-restricted diets. The tiny seeds cook quickly, thus requiring less fuel to prepare as a meal. Image width: 1.6 mm.
