Sample being put into cryogenic storage in liquid nitrogen. Liquid nitrogen is widely used in laboratories and industry as a coolant and for the cryostorage of samples. The steam coming from the liquid nitrogen is small particles of liquid water condensing as the liquid nitrogen boils. It is commercially produced by fractional distillation of liquid air. At normal pressure, liquid nitrogen boils at 77 degrees Kelvin (?195.8 degrees Celsius).
